We looked for inspiration for our sour IPA in the summer drink Aperol spritz. The beer has a body built on wheat malt, rice and oat flakes, and since citrus and acidity go well together both in taste and aroma, we hopped exclusively with Citra, added a pinch of orange peel and a significant amount of rhubarb and grapefruit puree.
